Polpette di ZUCCHINE e RICOTTA
Vi avevo accennato, nei giorni scorsi, che mia figlia Camilla quando si parla di mangiare le verdure, storce il naso anche senza averle nemmeno assaggiate.
Quindi ho deciso di "nasconderle" nel cibo che le preparo, come in questo caso.
A Camilla piacciono moltissimo le polpette di carne, ma questa volta ho voluto provare a farle con le zucchine e la ricotta.
La ricetta è la seguente:
INGREDIENTI
400 gr. di zucchine
150 gr. di ricotta
50 gr. di parmigiano reggiano grattugiato
50 gr. di pangrattato
1 uovo
sale & pepe
pangrattato per impanare le polpette
PROCEDIMENTO:
Lavare bene le zucchine, togliere il capo e la coda, grattugiarle molto bene e strizzarle per far uscire tutta l'acqua.
Mettere le zucchine grattugiate in una ciotola con ricotta, uovo, pangrattato e parmigiano, unire infine sale e pepe e mischiare con le mani il tutto.
Formare le polpette e poi passarle nel pangrattato per ricoprirle.
Mettere in una padella 3 cucchiai d'olio e cuocerle per circa 5 minuti, girandole di tanto in tanto, quando saranno dorate toglierle ed asciugarle con la carta per fritti.
Si possono cucinare anche in forno, preriscaldandolo e mettendole a 200° per circa 20 minuti.
